I am in the middle of grad school and spend the rest of my time running marathons, throwing weights around, snowboarding, hiking mountains, destroying my kitchen, dreaming of my future farm, trying not to kill my plants, and teaching undergrads how to do CPR. I am a Colorado girl at heart and I love everything about this state. Even when it snows in May.
When I started training for my first marathon, I gave up gluten and eventually dairy and have never looked back. Since then, I have been officially diagnosed with a gluten sensitivity and have been trying to manage my health issues with good food. It is has been an epic journey and I am continuing to learn lots along the way.
On this grand adventure, I have lost 50+ pounds and kept it off, started a small business, learned that I am not passionate about business, and most recently, qualified for the Boston Marathon. Through this process, I have discovered a love for food – both making it and eating it! I am excited to share my passion for food, training, and general awesomeness with all of you!
